Hamakawa Shoten brewery was founded in Kochi prefecture in 1904. The ample supply of soft water available thanks to the regions mountainous topology, is what gives the sake from Hamakawa Shoten its delicate yet nuanced flavour.
This Junmai Daiginjo is a great example of this. Brewed using Yamadanishiki rice, one of the finest rice strains for sake brewing, this sake offers an excellent balance of sweetness, acidity, richness and bitterness. It has a pleasant, rich finish with a hint of chestnut. Due to its delicate flavour, Bijofu Junmai Daiginjo is best paired with food that is not so heavy on the palate, such as sashimi and grilled fish, however it can be enjoyed on its own at the start of the evening.
