Nakashima Sake Brewing Company was founded in 1702 in Gifu. Almost 300 years later, they launched the Kozaemon brand (in 2000), which has become popular throughout the world. Using subsoil water flowing from Mt. Byōbu (part of the Ryōhaku mountain range) to bring out the full flavor of the rice, you can taste the pristine nature of the Mino region and Toji Nakashima's skill throughout the product line. Nakashima Brewing Company is dedicated to producing “umakuchi” sweet-smelling flavors with body and depth rather than crispy and dry “tanrei” flavors.
Kozaemon Shinano Miyamanishiki Junmai Ginjo is one of the brewery's best sellers. You can smell the mild Miyamanishiki rice (from Nagano) with notes of green apples and fresh acidity. Light and elegant with a lots of umami, this sake is best enjoyed cold with a variety of different foods.
